simple spicy tofu scram w/ Rosemary & garlic homefries

ingredients for scram
- 8 oz extra firm organic tofu
- 2 tbsp oil
- 3/4 of a red pepper- thinly sliced or chopped
- 1/2 of a red onion- thinly sliced or chopped
- 3/4 cup of lightly chopped kale or spinach
- 3/4 can of black beans
- 1/2 of an avocado for topping
- a few fresh cilantro leaves for topping
- fresh lime juice
Spices
- 1 cup of nutritional yeast
- 1/4 cup veggie stock or water
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp chili powder
- 1/4 tsp paprika
- 1/2 tsp turmeric or curry powder for color
- 1/2 tsp salt
- 1/4 tsp black pepper
potatoes
- 2 large rustic potatoes- chopped into 1/2 in cubes
- 2 tbsp oil
- 2-3 garlic cloves- minced finely
- 1 tbsp fresh or dried rosemary
- salt & pepper to taste
instructions for this amazingly simple/cheap meal
1. drain your tofu & wrap with paper towels and place in a pan and layer it with weight to press out the water. I like to wrap it, place it in a pan, and then add a huge sauce pan to the top and put in cans of beans ext. I do this 2-3 times before cooking it. So while that waits... let's continue.
2. chop your veggies, potatoes, and prep your spices, add a little more water or veggie stock to spice mixture if needed. set aside.
3. start cooking your potatoes, use a cast iron skillet or your favorite non-stick pan. get the pan hot, before adding the oil. this will help so the oil doesn't burn while your potatoes are getting soft. add potatoes to the hot oil, mix, add s & p, and put a lid on top to steam a little bit. let sit for 2-3 minutes.
4. take out your tofu, and place into a bowl. using a fork smash it up a bit but don't crumble it. get another pan on the stove, add oil, and once hot- add the tofu get a good light golden color on it before adding anything.
5. check your potatoes, and mix around. check if they are fork tender. at this time add your garlic, more s & p, and the rosemary. if fork tender, leave the lid off at this point.
6. once tofu is lightly golden, add in your red pepper and red onion. along with some s & p.
7. once the peppers & onions are fragrant, add in your spice mixture & the black beans. mix well. taste. adjust seasonings if needed.
8. once the tofu scram is all perfectly seasoned, add in the chopped kale or spinach. let that steam a bit and place your potatoes into a plate or bowl.
9. once the scram is done, add on top of your potatoes, and top with 1/2 an avocado, fresh cilantro leaves, and a squeeze of lime.
